Crisp rice, gochujang lacquer, cold cucumber, jammy egg, no timid bites.
Scallions, chiles, and ten minutes of gossip before prep starts.
Tiny kitchen, big appetite, every tool exactly where my hand expects it.
The truck is clean. The dumplings are hot. Nobody is talking about work anymore.

Closed the window, killed the hood, and sat on the curb with the crew. Brooklyn gets strangely quiet when you finally stop making noise.
